If you're a follower of my blog, then you know how much I love variety! I love the ability to make multiple options out of ONE meal since picky eaters run ramped in my house. 🙂

Choices make everyone happy. Healthy foods make me happy. Healthy, yummy, make- ahead meals make me even happier. Making a breakfast taste like dessert, now that is beyond amazing. THAT is exactly what happened here! I was just playing around the other day with steel cut oats and the idea to place the fruit at the bottom of the dish just came to be!

This takes a bit more time to make and cook and it's not an on- the- run kind of breakfast like my Personal Sized Baked Oatmeal's or Individual Steel Cut Oat Cups that you can take and go, BUT it is an INCREDIBLE breakfast. One you would want to enjoy with a cup of tea or coffee on the weekend.

This would be a perfect recipe to make for overnight guests since they can choose the fruit of their choice and will LOVE you for it! Eating one of this little fruit "cakes" made me feel like I was away at a Bed and Breakfast for the weekend, which made me relaxed and oh so happy. 🙂

Choose whatever fruit you like!

Cover it with oats! Top with fruit to identify what's under there! 🙂

 

When its done, flip it over upside down onto a plate! Oh...... yum!

 

Top with cream or lite coconut milk or even Greek yogurt!

It's like a dessert for breakfast!

Mini Upside Down Fruity Steel Cut Oat "Cakes" {No Sugar Added}

Serves: 6
Ingredients
  • 1 cup soaked standard steel cut oats*
  • 1 banana, mashed
  • 1 egg, beaten
  • 1 teaspoon vanilla extract
  • ½ teaspoon [url href="www.iherb.com/p/11070?at=0&rcode=yaj035" target="_blank"]Liquid Stevia, Vanilla Creme[/url]
  • ¼ cup milk of choice {I used 1%}
  • 1 tablespoon chia seeds
  • ¼ teaspoon salt
  • ¼ teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • Fresh or frozen fruit: 2 tablespoons for each serving[ I used frozen blueberries, mango and raspberries}
Instructions
  1. Preheat the oven to 350 degrees.
  2. Stir the soaked steel cut oats and add the banana, egg, vanilla extract, stevia and milk.
  3. Mix until incorporated.
  4. Combine the rest of the ingredients to the mixture.
  5. Spray 6 ramekins with nonstick cooking spray.
  6. Place the fruit into the ramekins then evenly distribute the oat mixture on top of each fruit in the dish.
  7. Add some fruit on top of the oats so you can identify each.
  8. Bake for 40-45 minutes.
  9. Let sit for 5 minutes then use a knife to loosen around the edges of the "cake". Carefully with a spoon lift the cake out of the ramekin, flipping it over onto a plate or bowl.
  10. Top with cream or lite coconut milk or even some Greek yogurt!

You must have known this was coming right?

After seeing my Mini Upside Down Fruity Steel Cut Oat "Cakes" you just had to know I would make something with chocolate in it didn't you? Of course I had to!

My kiddies were overjoyed! I used grain sweetened chocolate chips but you could use whatever kind you like or make your own. Either way, this is a dessert versus a breakfast, but it is still a healthy option if you do allow your family to have a bit of chocolate in their breakfast oats!

 

This was by far the tastiest photo shoot EVER!

 Directions:

Follow the same recipe to make the fruity oat cakes using QUICK steel cut oats, but instead of fruit add 2 tablespoons of chocolate chips to the bottom of the dish....oh.....yes......!!!

A bit more calories than the fruity cakes, BUT a whole lot healthier than a normal chocolate cake!
